Jill Parkin and Horst Biallis Simple Kneads artisan bakery recently expanded its offerings to include over 20 new traditional European pastries. The additions are due to the recent hiring of new bakers Jill Parkin and Horst Biallis, both previously of Ollie’s Bakery in Winston-Salem. Among the new selections at Simple Kneads Bakery: rugalach, various fruit danishes and strudels, turnovers, ricotta pie, frangipane tarts and Black Forest Cake along with other pastries. Yum! 
Simple Kneads Bakery Simple Kneads Bakery owner Bill Snider says, “One of the things we try to do is to have people who love what they do. It makes a big difference in the quality of foods you create.” Opening downtown almost seven years ago, Simple Kneads produces all breads and pastries by hand and is one of the few local bakeries to still create croissants from scratch. Snider is also an avid proponent of The Slow Food movement and patronizes the local market for all milk, eggs and flour used in each recipe.
